Thai Style Chicken Skewers


Thai Style Chicken Skewers


Featuring Thai Mix, Satay Spice, Mango Apricot Strawberry Vinegar, Sweet Chili Sauce, and Chili Lime Sea Salt Flakes.








Ingredients:

500 g/1 lb ground chicken or turkey 1 tbsp Thai Mix 1 tsp Satay Spice 1 small white/brown onion, peeled and cut into quarters 1 clove garlic 2 tsp fish sauce 2 spring onions, chopped finely 1 carrot, peeled and cut into fine matchstick sizes 1 cucumber cut into matchstick sizes 1 cup very finely cut cabbage, set aside some extra for grilling 2 tbsp Mango Apricot Strawberry Balsamic Vinegar 1 tsp light soy sauce 1 tbsp fresh lime juice 2 tsp castor sugar 2 tsp ghee Sweet chili sauce to serve 1/2 cup raw cashews Chili Lime Sea Salt Flakes

Directions:

Place Thai Mix, Satay Spice, onion and garlic in blender. Blend until a paste forms. Add the paste to ground turkey, spring onions, and fish sauce. Mix well. Divide mixture into 6-8 portions and mold around skewers. Place in fridge to chill for 10 minutes.

In a bow mix carrot, cucumber, cabbage, Mango Apricot Strawberry Balsamic, soy, sugar, and lime juice. Toss well. Place in fridge until serving.

Toast cashews under grill, then remove. Add Chili Lime Sea Salt Flakes and grind to your desired level. Keep aside for serving.

Heat grill and add ghee. Cook Thai Turkey skewers and cabbage wedges, turning until cooked through. Serve with pickled vegetables, cashews, chili sauce, and cabbage. Note that these are also perfect to make as meatballs, served on a lettuce cup. Makes for perfect appetizers or entertaining dish.

For extra spice, substitute the Satay Spice and add an extra tbsp of Thai Mix.
